Since pastries lend themselves to endless variation, I have constructed this part
of the website a bit differently than others parts.  Most of the pastry dough
recipes are separate from shaping and finishing methods so that you’ll feel free
to vary the types of dough used for each particular final product.  The pastry
recipes are written to all produce about the same volume of sweet dough so that
any dough can be used for any type of shaping and finishing.  Thus, its easy to
spice up plain cinnamon rolls by using a sweet potato dough.  Or you can make
authentic Brittany buns with croissant dough or try any other doughs to make
the same type of roll.  The possibilities are endless and the results are always
delicious!

Many of the recipes call for cutting the dough into twelve pieces and baking in 3
rows of 4 in a 9 x 12 inch pan.  However, one could use two jumbo muffin tins
(each with 6 muffin cups) or place the rolls on a parchment lined baking sheet
also.
